Asafoetida or Asafoetida

Asafoetida (German: stinking resin) is extracted from the root of a fenugreek-like plant, stinking asafetida (Ferula Assafoetida). The milky sap obtained smells strongly of sulphur and garlic.

Today, Asafoetida is not used to drive away ghosts and demons, but in Ayurvedic cuisine to add more flavor to dishes instead of garlic.

Asafoetida I like to use it in my kitchen because it replaces fresh garlic and onion and adds a unique flavor to every dish.

By cooking for a longer period of time, the true taste unfolds in a mixture of a delicious leek, onion and garlic aroma. Asafoetida are said to have a variety of positive properties. I use it in dhal (pulses) and these are made more digestible with asafoetida. Asafoetida stimulates the digestive fire (agni) and ensures optimal digestion of the food. I hardly use more than a pinch, otherwise the taste of the dish is dominated by the asafoetida. Asafoetida (Sanskrit: Hingu) balances Vata, promotes digestion and is a warming spice.
